海藻糖是由两个葡萄糖分子以a,a,1,1-糖苷键构成非还原性糖，自身性质非常稳定，海藻糖对生物体具有神奇的保护作用，是因为海藻糖在高温、高寒、高渗透压及干燥失水等恶劣环境条件下在细胞表面能形成独特的保护膜，有效地保护蛋白质分子不变性失活。而自然界中如蔗糖、葡萄糖等其它糖类，均不具备这一功能，海藻糖因此在科学界素有“生命之糖”的美誉。
