普鲁兰酶( pullulanase) 是一类淀粉脱支酶，因其能专一性水解普鲁兰糖( pullulan，麦芽三糖以α-1，6糖苷键连接起来的聚合物) 而得名，属淀粉酶类，能够专一性切开支链淀粉分支点中的α-1，6糖苷键，切下整个分支结构，形成直链淀粉[2]。该酶在55~65℃范围内活性较强, 其中60℃为其降解普鲁兰糖的最适温度。普鲁兰酶在低于70℃时稳定性较好, 残余活力在90%以上, 温度高于70℃后, 酶活力开始迅速下降。最适pH 值为5.0~6.0。在pH 值4.0~7.5 范围内, 普鲁兰酶稳定性较高, 活力损失较少, 酶的残余活力在90%以上。
Fe3+对普鲁兰酶活性有激活作用;Cu2+、Ag+ 、Hg2+、Pb2+对酶活性有强烈的抑制作用;Zn2+、Mg2+、Ni2+也有一定的抑制作用，其他金属离子对该酶活性影响不明显。

Pullulanase is a type of starch debranching enzyme that can specifically hydrolyze pullulan, maltotriose, and other sugars α- It is named after a polymer connected by 1,6 glycosidic bonds and belongs to the amylase class, which can specifically cleave the branching points of branched starch α- 1,6 glycosidic bonds cleave the entire branching structure to form amylose [2]. The enzyme has strong activity in the range of 55~65 ℃, with 60 ℃ being the optimal temperature for its degradation of pullulose. Pruranase exhibits good stability below 70 ℃, with residual activity above 90%. However, when the temperature exceeds 70 ℃, the enzyme activity begins to rapidly decrease. The optimal pH value is 5.0~6.0. Within the pH range of 4.0~7.5, the stability of pullulanase is relatively high, with less loss of activity, and the residual activity of the enzyme is over 90%.

Fe3+has an activating effect on the activity of pullulanase; Cu2+, Ag+, Hg2+, and Pb2+have strong inhibitory effects on enzyme activity; Zn2+, Mg2+, and Ni2+also have certain inhibitory effects, while other metal ions have little effect on the enzyme activity.
