使用条件：

反应温度50—55℃，最佳温度因底物的种类及浓度不同而有所改变；适宜PH值6—7，PH可因底物的种类、浓度不同而有所改变；添加量一般为0.1—0.3%(1000—3000u/g蛋白质)，根据不同底物作适当增减，反应时间作相应缩短或延长。嫩肉推荐用量1kg肉添加0.25-0.4g酶。

酶的最适添加量必须按照具体生产情况而定。

储存：

建议在阴凉干燥的环境下避光保存，储存温度：零度以下。贮藏过久或贮藏条件不利，会使酶活不同程度的降低；如温度湿度过高，则需要在使用时适当的增加使用量。
